1and 1/3 cup all-purpose flour
1and 1/4 teaspoon baking powder
1/2cupunsalted butter, softened
1/2cupfull fat sour cream
1cupunsalted butter, softened
4 cupsconfectioner’s sugar
2tablespoons(30ml) heavy cream
To make the vanilla cupcakes:
Preheat oven to 350F. Line a 12-count muffin pan with cupcake liners. Line a second muffin pan with 2 liners (this recipe will make 14 cupcakes). Set aside.
In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using a hand-held mixer), beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Add in the sour cream and mix until fully combined.
Slowly add the dry ingredients to the wet ingredients and mix until just combined, making sure not to over mix the batter.
Scoop the batter into the cupcake liners, filling them a little over half way full. You should end up with exactly 14 cupcakes.
Bake in separate batches at 350F for 18-22 minutes or until a wooden toothpick inserted into the center of the cupcake comes out clean.
Remove from the oven and allow to cool for a couple of minutes. Remove all of the cupcakes from the pan and transfer to a wire rack to cool completely.
To make the frosting
In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl using a hand-held mixer) beat the butter on medium speed until smooth.
Add in the confectioner’s sugar and vanilla and mix on low until well combined. Slowly add in the heavy cream, increase the speed to medium-high, and mix for a few more minutes until the frosting is smooth and well combined.
Frost the cooled cupcakes.
Store prepared cupcakes in an airtight container at room temperature for up to 2-3 days or in the refrigerator for up to five days.
Hey everyone!!! With Father’s Day coming this weekend and Toy Story 4 coming out in 10 days (who else is counting!!??!!??) I wanted to create a tutorial to celebrate both!
Drum roll…. here comes the alien cookie! Perfect for an Out of this World Dad!!!!
Easy cookie to begin with if you have never worked with Royal icing. Fun for kids and you can watch Toy Story while creating these cute lil aliens!!! Can you tell I love watching movies while baking?! Lol
I’m going to share with you 2 very easy recipes to create these fun cookies! First a easy sugar cookie recipe and an egg free royal icing recipe.
Sugar cookie Recipe:
1 cup unsalted butter (2 sticks)
1 cup granulated sugar
1 tbsp. Vanilla extract
3 cups cake flour
1/2 tsp. Salt
Cream together butter and sugar until fluffy. Add egg and vanilla. Mix dry ingredients a bowl, then add it into the butter mixture. Roll dough to 1/4″ and cut out coolie shapes. Best of chilled in refrigerator before baking. Bake for 8-10 minutes at 350F.
4-6 tbsp. Meringue powder
4 cups powdered sugar
6 tbsp. Hot water
Food coloring or gel
Mix meringue powder and powdered sugar. Add 1 tbsp. of the hot water at a time . Mix on high for 5 minutes. Add food coloring and hand mix with a spoon.
Yay now that your cookies are baked and cooled & whip up a batter of the royal icing mix. Pampered chef has the perfect Toy Story cookie cutters but Etsy has a variety of talented vendors who sell a alien cookie cutter as well!!
For the alien cookies you will also need:
Piping bag & sugar eyes! (Found at Michaels crafts)
Now that your Royal Icing is ready add it to your piping bag! Cut a very small hole at the tip of your bag once the bag is filled.
Outline the alien with your royal icing by applying light pressure to the bag.
Once the cookie is outlined fill the cookie with the royal icing. There is no wrong way to do this! Younger children may prefer a spoon to spread the icing! Most importantly just have fun!!
Now place the eyes on the cookie to create your very personal alien! If you’d like a firm royal icing wait a few hours before eating!

I couldn’t do another tutorial until I did quick one that represented “Spoonful of Sugar Baker” and well Mother’s Day is almost here. And I came across my Mother’s Day card from last year… tears! I love cards!
Moms are the most magical people ever! They guide you, teach, show unconditional love, encourage, and discipline. Moms are doctors, hair stylists, chefs, teachers, and most importantly someone who is always there to support you! Moms are incredible and even when you feel like you’re not enough as mom just know you are more than enough to your children! There are hard days and days that you feel like super woman! But seriously when you see your children smiling it makes it worth it all! They say it takes a village to raise a child but how about a village of women encouraging each other! Check in on each other, encourage one another, give a compliment, smile, and let each other know you are not alone! I believe every mom is doing what’s best for her children and family so stop with the judgments and negative thoughts! Moms, let’s have each other’s backs! Our children look at us and see the most beautiful person in the world inside and out and I want to be what they see! With that I made a very quick tutorial on creating these Mary Poppins inspired toppers! Oh and don’t doubt your self moms! The card that says “You are the Best” you are exactly that!!!
This has to be the easiest little cupcake topper to do! And if you love the Mary Poppins this would be fun to do with your children while watching the classic or new Mary Poppins movie! A baking & movie night is so fun!!!
Mini spoons (found at Michaels crafts)
White chocolate melts
In a microwave safe bowl Melt the white chocolate. Microwave in 30 minute increments mixing in between. Make sure not to over heat the chocolate. If it looks dry or stiff add one teaspoon of vegetable oil and mix well.
Dip your mini spoons into the white chocolate. Over your other bowl sprinkle your white sprinkles on to the spoon. The bowl will catch any sprinkles that didn’t make it onto your spoon. Next, place them on your parchment paper.
Once the chocolate has dried. Cut the red ribbon and tie a bow onto the spoon.
These can be used as chocolate pops or as toppers for a dessert.
